You have probably noticed that sometimes they show it in the search results (for certain keyword phrases) and Google show do not show the real-time web for other keyword phrases that you search for at Google.com. Somehow, algorithmically, the Google search engine adds these features into the organic search results.

Anchor text should match the page its linking to. If the anchor says red widgets, particularly for a page meant to convert for red widgets, it should have the phrase red widgets on the page. know some people will say this opens you up to OOP but I think as long as there are variations in the links, then youre good to go.
